Fried Elderflowers



Ingredients:
15-20 freshly picked Elderflowers with stems, about 4-5 long, this will help with dipping and frying
2 cups all purpose flour
3 eggs
1 dash of salt
2 ¼ cups of milk

Vegetable oil for frying
Confectioner’s sugar for dusting (optional)

1.You can just shake of any dirt or insects of the flower heads or if you really want to wash them, rinse the flowers gently under cold, flowing water and drain them on paper towels or in a strainer.
2. Mix flour, eggs, milk and dash of salt into a smooth and thin batter.
Heat up about ½ inch of oil in a high-sided pan on medium-high.
3. Holding the flower by their stem, dip one elderflower into the batter and let the excess drip off. Fry the elderflower until golden brown. This only takes a few minutes.. Let the flower drain on a paper towel. Repeat with remaining elderflowers.
4. Dust with confectioner’s sugar (optional) Serve warm.
5. If you have batter left over, you can dip apple slices in it and fry them up or just make pancakes.


Makes a great dessert . Enjoy with a nice cup of coffee.
