Onion Bread




- Ingredients for the bread:

2 cups all purpose flour
2/3 cup of water, plus 2 ½ tbs if needed
2 ¼ tsp active dry yeast
1 tsp olive oil
1 cup fried onions, you can use store bought or make them yourself ( recipe follows)
½ tsp sugar
1 tsp salt
cornmeal flour for baking sheet

- Fried onions:

½ cup of all purpose flour
¼ tsp paprika powder, optional
1/8 tsp salt
1 cup of thin sliced onions, cut into quarters and separated

oil for frying

- Making fried onions:

Mix dry ingredients together. Coat onions with mixture and shake of the excess. Fry in medium heat oil until golden brown. Drain on paper towel and let cool.

- Making the bread:


Put all the ingredients ( except the 2 ½ tbs water) in a bowl and knead for 5 min.  Add the 2 ½ tbs water if the dough is still a bit dry. The dough should be firm but not too wet or dry. Shape into a round loaf, cover and let rest for 45 min. in a draft free place. 

Preheat oven to 360 Fahrenheit.

Line a baking sheet with parchment paper and sprinkle with cornmeal flour.
Place loaf on baking sheet and bake for 35-45 min. Bread should sound hollow when tapped on the bottom.

Let cool.

Enjoy with some salted butter and a glass of wine.
